 Mango pickle is typically made with raw mangoes, mustard seeds, fenugreek seeds, chili powder, turmeric, salt, vinegar, and oil.  The mangoes are chopped, mixed with the spices, and then preserved in the oil and vinegar mixture. The ingredients ferment as the pickle ages, developing flavor. 
 Mango pickle is spicy, sweet, and sour. 
 Mango pickle can enhance the flavor of simple meals like dal-rice, curd rice, and khichdi, or be served in elaborate thalis. 
 There are many varieties of mango pickle, including Avakaya, Aam chunda, Punjabi aam ka achar, Rajasthani aam ka achar, and mavinakayi uppinakayi. 
Mango pickle originated in the Delta Districts of Andhra Pradesh.
